Simple And Fresh Arugula Salad

Arugula salad is one of my favorite summer salads. It is so refreshing, and its lemony, peppery bite makes it a tasty topping or addition to pizza, sandwiches, wraps, or on its own!


Type: Salad

Difficulty: Easy

Ingredients

  • 1/4 cup extra-virgin olive oil

  • 1/2 lemon, juiced

  • Salt and freshly ground black pepper

  • A chunk of Parmigiano-Reggiano


Preparation

Tear the large vein out from the center of the arugula leaves

In a large serving bowl, drizzle the arugula with the oil, squeeze in the lemon juice, and sprinkle with salt and pepper. Toss until well mixed and taste for seasoning.

Use a vegetable peeler to shave thin pieces of Parmigiano over the top.
